Clarkie Eats: Broccoli Cheddar Omelette

Sometimes, we all could use a simple dish that just hits the spot with comfort. This is a relatively simple meal that I love to eat when I’m either lazy, or just feeling like I should be eating healthy even when I want comfort food. And if it’s got vegetables, it has to be healthy, right? Dorm friendly, all you need is a bowl, pan, spoon and stove.

Broccoli Cheddar Omelette

Ingredients you need:

  • 2 Eggs
  • Carton of milk
  • Handful of cooked broccoli
  • Some cheese (Whichever type you want, however much you want, measure with your heart)

1) Crack the eggs into a bowl, and add a splash of milk, not a whole lot. Whisk with a fork until everything is blended.

2) Heat up a pan. If you have some olive oil or butter, make sure to put that on the bottom so nothing sticks.

3) Pour the egg mixture in. Wait until it turns into a more solid consistency.

4) Spread some cheese on one side.

5) Put some broccoli on top of the cheese. Optionally, you can also spread some cheese on top.

6) With a spatula or other utensil, flip the non-cheese-covered side over. Allow to cook a moment before flipping it over onto its other side to cook fully.

7) Serve!
